Origin: Yamagata pref.
Noodle type: Soba noodle
Boiling time: 6 min.

Specific ingredient:
Buckwheat flour (specially milled for smooth texture)

Feature:
Made with carefully selected buckwheat flour and dried at low temperature to preserve the soba’s natural aroma. The noodles are finely cut for a smooth, elegant texture and a clean aftertaste. Cooking tip:
Boil plenty of water (about 1 L per 110 g of noodles), add the noodles gradually, and gently loosen with chopsticks. Cook for about 6 minutes, then drain and rinse well in cold water. Serve with dipping sauce and garnish with wasabi, green onions, and nori.
