In 1957, the brand took the lead in the cultivation of Ayu in Biwako, Hikone. The brand uses the Ayu from Biwako as fish fry for its aquaculture, which has better quality both in texture and flavour compared to the ordinary artificial hatched fish. This delicious, flavourful Japanese Cut Open and Dried Ayu is created by the brand’s traditional handcrafted skills, packed with the flavour of umami.
