Origin: Ōita Prefecture

 

These log-cultivated dried shiitake mushrooms come from Ōita, Japan’s largest production area for dried shiitake. The premium Hana-donko variety is grown slowly during the harsh winter season, producing thick caps with distinctive cracks — a mark of superior quality. With their firm texture, rich aroma, and deep flavour, these mushrooms are highly prized. The cold growing conditions concentrate their umami components, making them exceptionally savoury.
